4 chicken breasts or thighs
1 can (13.5 oz) coconut milk
2 tablespoons lime juice
1 tablespoon lime zest
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup jasmine rice
2 cups chicken broth or water
Fresh cilantro for garnish (optional)
Lime wedges for serving (optional)
Instructions
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add chicken breasts or thighs to the skillet, season with salt and black pepper, and cook until browned on both sides.
Pour in the coconut milk, lime juice, and lime zest. Bring to a simmer.
Cover and cook for about 20 minutes, or until the chicken is cooked through.
While the chicken is cooking, rinse the jasmine rice under cold water until the water runs clear.
In a separate pot, combine the rinsed rice and chicken broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
Once the chicken is done, remove it from the skillet and let it rest for a few minutes before slicing.
Serve the chicken over the jasmine rice, drizzled with the coconut lime sauce, and garnish with fresh cilantro and lime wedges if desired.
Notes
For a spicier kick, add red pepper flakes or sliced jalapeños to the chicken while cooking.
This dish can be made ahead of time and reheated for a quick meal.
