Description

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup coconut milk
  • 1/4 cup chopped green onions (for garnish)
  • Chopped cilantro (for garnish, optional)
  • Cooked rice or noodles (for serving)


Instructions

  1. In a slow cooker, combine the chicken thighs, peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes.
  2. Stir until the chicken is well coated with the sauce.
  3. Pour in the coconut milk and mix gently.
  4. Cover and cook on low for 6-8 hours or until the chicken is tender and easily shredded.
  5. Once cooked, shred the chicken in the slow cooker and mix it with the sauce.
