- 1 cup creamy peanut butter
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup coconut milk
- 1/4 cup chopped green onions (for garnish)
- Chopped cilantro (for garnish, optional)
- Cooked rice or noodles (for serving)
Instructions
- In a slow cooker, combine the chicken thighs, peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes.
- Stir until the chicken is well coated with the sauce.
- Pour in the coconut milk and mix gently.
- Cover and cook on low for 6-8 hours or until the chicken is tender and easily shredded.
- Once cooked, shred the chicken in the slow cooker and mix it with the sauce.
- Serve over cooked rice or noodles, garnished with green onions and cilantro if desired.
Notes
- Adjust the amount of red pepper flakes based on your spice preference.
